Wireless Contract Extensions

Most people I know do not understand how wireless companies can automatically and verbally extend contracts for two years for calling just to add minutes to a plan, to ask a question, to set up temporary international calling plan for travel and the like. I thought 2-year contracts had to be in writing and signed.
